For DAF WINES, every harvest is unique. The aim is not absolute uniformity from year to year, but the authentic expression of the particular characteristics of each vintage.
Winemaking is approached as a process of guidance rather than imposition. Through careful choices and minimal intervention, the wine retains its natural personality and evolves in a way that reflects its place of origin.
Sustainability and responsibility
The family's relationship with the vine, spanning more than four generations, has shaped a deep environmental awareness. Protecting the soil, responsibly managing natural resources and farming with respect for biodiversity are core pillars of daily operations.
People before the product
At DAF WINES, wine gains its true value through the people who create it and those who enjoy it. The personal connection with visitors, the hospitality, the sharing of knowledge and the telling of the story behind each label are an integral part of the winery's philosophy.
At DAF WINES, they believe that the true identity of Cretan wine lies in the island’s indigenous varieties. Varieties such as Dafni, Vidiano, Plyto, Liatiko and Mandilari are a precious cultural heritage and are cultivated with special care.
The vineyards of DAF WINES are located in Dafnes, Heraklion, a region with a centuries-old winemaking history and unique soil and climate conditions. Every wine is an expression of this distinctive terroir, capturing in the glass the microclimate, the soil and the natural balance of the region.
The winery’s philosophy does not seek to “correct” nature, but to work with it. For this reason, intervention in both the vineyard and the winery is kept to a minimum, so that each variety authentically reveals its aromas and character.
On the hills of Dafnes, at an altitude of 350 metres, our vineyards stretch out beneath the Cretan sun. The unique microclimate and the limestone soil give our grapes an exceptional character. The vines are cultivated with special care and continuous study of the indigenous varieties. The goal is to produce quality wines that showcase the versatile vineyard of Crete.
Preserving and showcasing these varieties is not only a choice of quality, but also a commitment to the history of Cretan viticulture and to the generations to come.
